Peanut Butter Oatmeal Bars

  • 1/2 cup unsalted butter (softened to room temperature)
  • 1/4 cup granulated sugar
  • 1/3 cup brown sugar (packed)
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/3 cup creamy peanut butter
  • 1 cup whole wheat flour (can also substitute all-purpose flour, just add 1/4 tsp salt and 1/2 tsp baking soda)
  • 1 cup rolled oats (or quick oats)

Peanut Butter Streusel

  • 1/4 cup whole wheat flour
  • 1/4 cup brown sugar (packed)
  • 2 tbsp creamy peanut butter (softened to room temperature)
  • 1 1/2 tbsp unsalted butter (softened to room temperature)

Peanut Butter Drizzle

  • 1/3 cup powdered sugar
  • 1/4 cup creamy peanut butter
  • 13 tbsp milk (add 1 tbsp at a time, additional milk may be added until drizzle consistency is reached)

Instructions

  1. Prepare the Baking Pan: Preheat the oven to 350 degrees F and line a 9×9 inch baking pan with parchment paper or spray with non-stick cooking spray.
  2. Cream Butter and Sugars: In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until combined and fluffy. Add the egg, peanut butter, and vanilla extract, then mix until the batter is well combined and smooth.
  3. Incorporate Oats and Flour: Stir in the oats by hand until evenly incorporated in the batter. Gently fold in the flour by hand until just combined, being careful not to overmix to maintain a tender texture.
  4. Spread Batter: Spread the batter evenly into the prepared baking pan, smoothing the surface with a spatula.
  5. Make Peanut Butter Streusel: In a separate bowl, combine the flour, brown sugar, peanut butter, and softened butter. Mix until the mixture reaches a crumbly consistency, avoiding overmixing to keep the streusel light and crumbly. Evenly sprinkle this streusel over the oatmeal bars batter in the pan.
  6. Bake the Bars: Bake the bars in the preheated oven at 350 degrees F for 25-28 minutes, or until the bars are lightly golden on top and a toothpick inserted near the center comes out clean.
  7. Cool Bars: Remove the bars from the oven and let them cool in the pan for 15-30 minutes before adding the drizzle.
  8. Prepare Peanut Butter Drizzle: While the bars are baking, whisk together the powdered sugar, peanut butter, and 1 tbsp of milk in a small bowl. Add additional milk 1 tbsp at a time until the mixture reaches a smooth, pourable drizzle consistency. Chill the drizzle in the fridge until ready to use.
  9. Drizzle and Serve: For easy icing, transfer the peanut butter drizzle to a piping bag or a Ziploc bag with a small corner snipped off. Drizzle evenly over the cooled bars. Let the bars set for 10 minutes before cutting into squares.
  10. Storage: Store any remaining bars in an airtight container at room temperature for up to 5 days to keep them fresh.
