A delicious and comforting Teriyaki Salmon Sushi Bake featuring tender salmon marinated in teriyaki sauce, baked over a bed of sticky sushi rice, and topped with creamy avocado, spicy mayo, furikake, crispy fried onions, and scallions for an irresistible fusion of flavors and textures.

Ingredients

Scale

Salmon Mixture

  • 8 oz Salmon (Try sockeye or Atlantic salmon for variety)
  • 1/4 cup Teriyaki Sauce (Japanese BBQ sauce as alternative)
  • 1/2 tsp Kosher Salt (Table salt can be used)

Seasoning

  • 1 tbsp Brown Sugar (Optional for less sweet)
  • 1 tsp Garlic Powder (Fresh minced garlic can substitute)

Base

  • 2 cups Cooked Sushi Rice (Can substitute with short-grain or jasmine rice)

Toppings

  • 1 medium Avocado (Optional, for simpler flavor)
  • 2 tbsp Spicy Mayo (Mayonnaise mixed with sriracha)
  • 1 tbsp Furikake (Crushed nori or sesame seeds as alternative)
  • 1/4 cup Crispy Fried Onion Bits (Panko breadcrumbs can substitute)
  • 2 tbsp Scallions (Chives for a milder option)

Instructions

  1. Prep the Salmon: Remove the skin from the salmon and cut into 1-inch cubes. In a mixing bowl, combine the salmon cubes with teriyaki sauce and kosher salt. Set aside to let the flavors meld.
  2. Build the Bake: In a small baking dish, firmly press the cooked sushi rice to form a flat, even base. Layer the salmon mixture evenly over the rice. Sprinkle garlic powder and brown sugar evenly on top for depth of flavor.
  3. Broil: Preheat your oven’s broiler to high and place the baking dish on the top rack. Broil for approximately 6 minutes until the salmon becomes caramelized, slightly browned, and cooked through.
  4. Add Toppings: Carefully remove the dish from the oven. Evenly top the baked salmon with cubed avocado, drizzle spicy mayo over the surface, sprinkle furikake, crispy fried onions, and finely diced scallions to add color, texture, and extra flavor.
  5. Serve Immediately: Serve the Teriyaki Salmon Sushi Bake while hot to enjoy the combination of warm, savory, sweet, and creamy elements in every bite.

Notes

  • Brown sugar can be omitted for a less sweet version of this dish.
  • Fresh minced garlic can replace garlic powder for a stronger garlic flavor.
  • Use short-grain or jasmine rice if sushi rice is not available.
  • Avocado can be skipped if you prefer a simpler flavor profile.
  • Spicy mayo is easily made by mixing mayonnaise with sriracha sauce.
  • Furikake can be substituted with crushed nori or sesame seeds depending on preference.
  • Crispy fried onion bits add a nice crunch but can be swapped with panko breadcrumbs.
  • Chives can be used instead of scallions for a milder onion flavor.
