These Sausage Egg Breakfast Roll-Ups are a quick and easy morning treat combining savory breakfast sausage, fluffy scrambled eggs, and melted cheddar cheese all wrapped in buttery crescent roll dough. Perfect for busy mornings or a crowd-pleasing brunch, they bake up golden brown and delicious in under 30 minutes.

Ingredients

Scale

Sausage

  • 6 breakfast sausage links (fully cooked)

Egg Mixture

  • 4 large eggs
  • 1 tablespoon milk
  • Salt and pepper to taste
  • 1 tablespoon butter

Other

  • 1 cup shredded cheddar cheese
  • 1 can (8 oz) refrigerated crescent roll dough

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s adequately heated for baking the roll-ups.
  2. Prepare Egg Mixture: In a bowl, whisk together 4 large eggs, 1 tablespoon milk, salt, and pepper until well combined for fluffy scrambled eggs.
  3. Cook Eggs: Melt 1 tablespoon butter in a skillet over medium heat, then scramble the egg mixture until just set but still moist to avoid overcooking.
  4. Prepare Dough: Unroll the crescent roll dough and separate it into individual triangles to create the base for each roll-up.
  5. Assemble Roll-Ups: Place a spoonful of scrambled eggs onto each dough triangle, sprinkle with shredded cheddar cheese, then place one fully cooked breakfast sausage link at the wide end of the triangle.
  6. Roll Up: Starting from the wide end, carefully roll each triangle over the filling to encase the ingredients.
  7. Bake: Arrange the roll-ups on a baking sheet lined with parchment paper and bake in the preheated oven for 15–20 minutes until the dough is golden brown and cooked through.
  8. Serve: Remove from the oven, let cool slightly, and serve warm for a delicious breakfast or brunch treat.

Notes

  • Use fully cooked sausage links for convenience and to ensure food safety.
  • You can substitute cheddar cheese with your preferred type of cheese like mozzarella or pepper jack.
  • Make sure not to overcook the scrambled eggs during cooking, as they will continue to cook inside the dough.
  • For a spicier kick, add a sprinkle of chili flakes or diced jalapeños to the filling.
  • These roll-ups can be prepared ahead of time and baked fresh in the morning.
