Ingredients

Scale

Sweet Potato Mixture

  • 4 large sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1/2 cup melted butter
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Pecan Streusel Topping

  • 1 cup chopped pecans
  • 1/2 cup flour
  • 3 tablespoons melted butter (for streusel)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Prepare Sweet Potatoes: Boil the peeled and cubed sweet potatoes in a large pot of water until they are tender, which should take about 15-20 minutes. Drain them well.
  3. Mash Sweet Potatoes: Mash the cooked sweet potatoes in a large mixing bowl. Stir in the brown sugar, 1/2 cup melted butter, milk, vanilla extract, and cinnamon until the mixture is smooth and well combined.
  4. Assemble Casserole: Grease a baking dish lightly with butter or cooking spray. Spread the mashed sweet potato mixture evenly into the dish.
  5. Prepare Streusel Topping: In a separate small bowl, combine the chopped pecans, flour, and 3 tablespoons melted butter. Mix until crumbly and well blended.
  6. Top and Bake: Sprinkle the pecan streusel mixture evenly over the sweet potato layer. Place the baking dish in the preheated oven and bake for 30 minutes, or until the topping is golden and crisp.
  7. Serve: Remove from the oven and allow to cool slightly before serving. Enjoy as a savory-sweet side dish to your favorite main courses.

Notes

  • For a richer casserole, you can substitute heavy cream for the milk.
  • To add extra flavor, a pinch of nutmeg can be included in the sweet potato mash.
  • Ensure sweet potatoes are drained thoroughly to avoid a watery casserole.
  • Chopped marshmallows can be added on top of the streusel for a sweeter variation.
  • Use fresh pecans for the best crunch and flavor.
