Instructions

  1. Prepare the Chicken: If you do not have leftover cooked chicken, cook chicken breasts by boiling, baking, or grilling until fully cooked. Allow to cool before shredding or dicing into bite-sized pieces to make handling and eating easier.
  2. Toss Chicken with Sweet Chili Sauce: In a mixing bowl, combine the cooked chicken with the sweet chili sauce. Stir thoroughly to ensure each piece of chicken is evenly coated with the flavorful spicy-sweet glaze.
  3. Prepare the Veggies: Thoroughly wash and shred the lettuce or mixed greens. Shred the carrots, thinly slice the cucumber and red onion. If using avocado, slice it just before assembling the wrap to prevent discoloration.
  4. Assemble the Wraps: Lay each tortilla flat on your work surface. Optionally spread a thin layer of mayonnaise or Greek yogurt in the center for creaminess. Add a base layer of greens, followed by the sweet chili chicken, shredded carrots, cucumber slices, red onion, and avocado slices if using. Sprinkle shredded cheese and chopped cilantro on top.
