These Strawberry Love Notes are charming, flaky pastry envelopes filled with sweet strawberry jam, perfect for a delightful treat or special occasion. Made with refrigerated pie crusts and a touch of sugar, they are baked to golden perfection and decorated with little heart-shaped dough cutouts, creating a romantic and tasty presentation.

Ingredients

Scale

Pastry

  • 2 refrigerated pie crusts
  • Flour for rolling out dough

Filling

  • 1/2 cup strawberry jam

Topping

  • 1 egg, for egg wash
  • 1/4 cup granulated sugar, for sprinkling

Instructions

  1. Preheat and Prepare Dough: Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper. On a lightly floured surface, roll out one pie crust and cut it into long diamond shapes about 4 inches on each side using a paring knife. Transfer these diamonds to the baking sheet and reroll any extra dough to make about 6 diamonds total.
  2. Fill and Fold Envelopes: Place a very small dollop of strawberry jam in the center of each diamond. Fold the corners of the longer sides into the center, then fold the remaining corner to create an open envelope shape. Press lightly to seal. Use a small heart cookie cutter to cut hearts from the remaining dough and place one heart in the center of each envelope.
  3. Freeze Before Baking: Freeze the prepared envelopes for at least 30 minutes to help them hold their shape and ensure flakiness during baking.
  4. Brush and Sprinkle: Brush the envelopes with egg wash (beaten egg) and sprinkle the tops evenly with granulated sugar to add sweetness and a sparkly finish.
  5. Bake and Cool: Bake the envelopes in the preheated oven until golden brown, approximately 15 minutes. Once done, let them cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Use very small amounts of jam to prevent the filling from leaking during baking.
  • Freezing the shaped pastries before baking helps maintain their structure and improves flakiness.
  • The granulated sugar on top can be substituted with coarse sugar or sanding sugar for extra sparkle.
  • These are best enjoyed the day they are made but can be stored in an airtight container for 1-2 days.
  • For a dairy-free version, use an egg substitute for the wash or a brush of milk alternative.
