Rice:

  • 2 cups uncooked rice

Broccoli:

  • 2 small heads broccoli, chopped

Chicken:

  • 3 large chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano

Sticky Sauce:

  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder mixed with 2 tbsp water to make a slurry (sub cornstarch)

Spicy Mayo:

  • 1/2 cup mayo
  • 1 tbsp sriracha
  • 23 tbsp water

For Topping:

  • sesame seeds

Instructions

  1. Cook Rice: Prepare rice according to package instructions.
  2. Steam Broccoli: Steam chopped broccoli until fork-tender. Set aside.
  3. Prepare Chicken: Cut chicken breasts into small bite-sized pieces. Toss with olive oil and spices. Cook in air fryer at 400F for 10-12 minutes or until internal temperature reaches 160F.
  4. Make Sticky Sauce: In a saucepan, combine soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, and ginger. Bring to a boil, then add arrowroot slurry. Cook until thickened.
  5. Assemble Bowls: Layer rice, broccoli, cooked chicken, and sticky sauce in bowls. Drizzle with spicy mayo and sprinkle with sesame seeds.

Notes

  • You can adjust the level of spiciness by increasing or decreasing the amount of sriracha in the sauce and mayo.
  • Feel free to add additional vegetables or toppings to customize your rice bowls.
