Zucchini Boats:

  • 4 medium zucchinis
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

BBQ Chicken Filling:

  • 1 lb (450g) cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup finely chopped red onion
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Optional: sliced jalapeños for extra heat

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Zucchini: Rinse the zucchinis under cold water. Cut them in half lengthwise and scoop out the seeds to create boats. Lightly brush the insides with olive oil and season with salt and pepper.
  3. Mix the Filling: In a large bowl, combine the shredded chicken, 3/4 cup of BBQ sauce, garlic powder, onion powder, red onion, and half of the chopped cilantro. Mix until well combined.
  4. Stuff the Zucchini: Spoon the BBQ chicken mixture evenly into each zucchini boat, packing it in lightly.
  5. Top with Cheese: Sprinkle the tops with the remaining 1/4 cup of BBQ sauce and an even layer of shredded cheddar cheese. If you like some spice, add sliced jalapeños on top.
  6. Bake: Place the stuffed zucchini boats in a baking dish and cover with aluminum foil. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  7. Garnish and Serve: Once cooked, remove the zucchini boats from the oven. Allow them to cool for a few minutes before garnishing with the remaining chopped cilantro. Serve warm and enjoy!
