  • 1 ½ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients:

  • 1 cup peaches, peeled and diced
  • ½ cup vegetable oil
  • ½ cup sugar
  • 2 eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees. Grease 3 mini loaf pans or 1 large loaf pan.
  2. In a medium bowl, mix peaches, oil, sugar, eggs, sour cream, and vanilla.
  3. Stir in flour, baking soda, and salt until just combined.
  4. Pour batter into prepared pans.
  5. Bake mini loaves for 25-30 minutes, large loaf for 50-55 minutes.
  6. Let cool before slicing and serving.
