For the Chicken:
- 4 bone-in, skin-on chicken thighs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp garlic powder
- 2 tbsp vegetable oil
For the Gravy:
- 1 large onion, thinly sliced
- 3 garlic cloves, minced
- 2 tbsp all-purpose flour
- 2 cups chicken broth
- 1/4 cup heavy cream (optional)
For Serving:
- 2 cups cooked white or brown rice

- Season the Chicken: Season chicken thighs with salt, pepper, paprika, and garlic powder.
- Sear the Chicken: In a large skillet, heat oil over medium-high heat. Sear chicken skin-side down until golden and crispy, about 5-6 minutes. Flip and cook 2-3 minutes more. Remove and set aside.
- Caramelize Onions: In the same skillet, reduce heat to medium and add sliced onions. Cook until caramelized, about 10-12 minutes.
- Add Garlic and Flour: Add minced garlic and cook for 1 more minute. Sprinkle in the flour, stir, and cook for 1-2 minutes to eliminate raw flour taste.
- Make the Gravy: Slowly whisk in chicken broth, scraping up brown bits. Add cream if using. Return chicken to skillet, skin-side up. Bring to a simmer, cover, and cook for 25-30 minutes until chicken is cooked through.
- Cook the Rice: While chicken simmers, cook rice according to package instructions.
- Serve: Serve chicken and gravy over rice. Garnish with parsley if desired.
