Ingredients

Scale

Main Ingredients

  • 2 boneless skinless chicken breasts
  • 1 small yellow onion, sliced into 1 inch rounds
  • 1/4 cup chicken broth or chicken bone broth
  • 8 ounces cream cheese, sliced into 4 cubes
  • 3/4 cup ranch dressing or creamy blue cheese dressing
  • 1/4 cup hot sauce
  • 1/4 cup sharp cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded

Optional Ingredients

  • Raw veggies, pretzels, or crackers for dipping
  • Chives for garnish

Instructions

  1. Prepare Slow Cooker Base: Line the bottom of the slow cooker with the sliced onions and pour in the chicken broth. Place the chicken breasts evenly over the onion slices.
  2. Cook Chicken: Cover and cook on high for 2.5 hours, allowing the chicken to become tender and infused with onion and broth flavor.
  3. Shred Chicken: Carefully transfer the cooked chicken to a plate and shred it using two forks. Remove the cooked onions from the slow cooker and drain any remaining broth.
  4. Add Creamy Mixture: Turn the slow cooker to low heat. Add shredded chicken back into the cooker along with cream cheese, ranch dressing, hot sauce, cheddar cheese, and mozzarella cheese. Stir gently to combine all ingredients.
  5. Cook and Melt Cheese: Let the mixture cook on low for 30 minutes, stirring occasionally, until the cheese is fully melted and the dip is hot throughout.
  6. Adjust Seasoning and Serve: Taste the dip and adjust seasoning by adding more hot sauce for additional spiciness or more ranch dressing to mellow it out. Garnish with chopped chives if desired. Serve warm with raw veggies, pretzels, or crackers for dipping.

Notes

  • Using bone broth can add extra depth of flavor compared to regular chicken broth.
  • If you prefer a milder dip, reduce the amount of hot sauce or substitute with a milder wing sauce.
  • Make sure to shred the chicken finely for an even dip texture.
  • Keeps well in the refrigerator for up to 3 days; reheat gently before serving.
  • For extra cheesiness, add more shredded cheddar or mozzarella can be sprinkled on top before serving.
