  • 400g/14oz can corn kernels, drained
  • 400g/14oz can black beans, drained

Instructions

  1. Warm Tortillas: Microwave half of the tortillas very briefly for about 15 seconds to make them pliable and prevent cracking when rolling.
  2. Prepare Work Area: Lay one tortilla out on a clean surface and keep the remaining tortillas warm by covering them with a tea towel.
  3. Assemble Burrito: Place cheese down the middle of the tortilla, then add approximately 1/3 cup of shredded beef, a portion of corn kernels, black beans, and finally about 1/4 cup of Mexican red rice on top.
  4. Roll Burrito: Carefully roll up the tortilla around the filling to form a burrito. Wrap each burrito in foil to hold it together.
  5. Cook Burritos: For immediate serving, heat a skillet over medium heat and cook the burritos for 4 to 5 minutes on each side until the tortilla is browned and the filling is heated through.
  6. Storage and Reheating: For freezing, place the foil-wrapped burritos in the freezer. When ready to eat, reheat from frozen in a 350°F (180°C) oven for about 40 to 45 minutes (foil on), or thaw and then pan-fry as above. Alternatively, microwave without the foil, though pan cooking yields a crispier tortilla.
