  • 2 large eggs
  • ½ cup whole milk
  • ¼ cup olive oil
  • 2 tbsp plain Greek yogurt or sour cream

  • ½ tsp salt
  • ¼ tsp garlic powder

  • ⅓ cup chopped sun-dried tomatoes (in oil, drained)

Instructions

  1. Preheat and Prep: Preheat oven to 350°F (175°C). Grease and line an 8×4-inch loaf pan with parchment paper.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, milk, olive oil, and yogurt until smooth.
  3. Combine Dry Ingredients: In a separate bowl, stir together the flour, baking powder, salt, and garlic powder.
  4. Combine and Fold: Add the dry ingredients to the wet mixture. Stir gently until just combined — do not overmix. Fold in mozzarella, sun-dried tomatoes, and basil.
  5. Bake: Pour batter into the prepared loaf pan and smooth the top. Bake for 40–45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
