  • 6 large eggs
  • 1⁄2 cup milk
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon black pepper
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas

Instructions

  1. Heat a large skillet over medium heat. Crumble the breakfast sausage into the skillet and cook it, stirring occasionally, until browned and fully cooked through, about 5-7 minutes.
  2. Transfer cooked sausage to a paper towel-lined plate to drain excess grease.
  3. In the same skillet, melt butter over medium-low heat.
  4. In a bowl, whisk eggs with milk, salt, and black pepper until smooth.
  5. Pour egg mixture into skillet with melted butter.
  6. Cook eggs undisturbed until edges begin to set.
  7. Stir eggs gently with a spatula, moving from outside toward the center.
  8. Continue cooking, stirring occasionally, until eggs are cooked through but still soft and creamy.
  9. Remove skillet from heat and stir in cooked sausage and shredded cheddar cheese.
  10. Place tortillas on a flat surface; spoon egg, sausage, and cheese mixture onto each tortilla.
  11. Fold in sides of each tortilla, then roll up tightly from bottom to top.
  12. If desired, toast roll-ups seam side down in a nonstick skillet over medium heat.
  13. Serve warm.
