Penne Pasta:

  • 1 lb penne pasta

Chicken:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 1⁄2 tsp Cajun seasoning

Sautéed Vegetables:

  • 2 tbsp olive oil, divided
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1⁄2 red onion, sliced
  • 3 cloves garlic, minced
  • 23 jalapeño peppers, sliced (seeds removed for less heat)

Sauce:

  • 4 tbsp butter
  • 1⁄4 cup all-purpose flour
  • 2 cups milk or half-and-half
  • 1 cup grated Parmesan cheese
  • 1⁄2 tsp salt
  • 1⁄4 tsp black pepper

Garnish:

  • 1⁄4 cup chopped fresh parsley

Instructions

  1. Cook the Penne Pasta: Boil the penne pasta until al dente, then drain and set aside.
  2. Sear the Chicken: Season chicken with Cajun seasoning and cook until browned; set aside.
  3. Sauté Vegetables: Cook bell peppers, onion, garlic, and jalapeños until tender-crisp; remove from skillet.
  4. Make the Sauce: Melt butter, whisk in flour, then gradually add milk. Simmer until thickened, then stir in Parmesan, salt, and pepper.
  5. Combine and Serve: Add pasta, chicken, and vegetables to the sauce in the skillet. Toss to coat and serve hot, garnished with parsley.

Notes

  • For extra heat, leave the jalapeño seeds in.
  • You can adjust the Cajun seasoning to suit your spice preference.
