For the Thousand Island Dressing:

  • ½ cup mayonnaise
  • 2 tablespoons grated onion
  • 2 tablespoons ketchup
  • 2 tablespoons sweet pickle relish
  • 1 pinch paprika
  • 1 pinch salt

For the Sandwich:

  • 8 slices rye bread
  • 8 slices Swiss cheese
  • 1 cup creamy coleslaw
  • 1 lb sliced turkey
  • 3 tablespoons unsalted butter

Instructions

  1. Prepare the Thousand Island Dressing: In a bowl, mix together mayonnaise, grated onion, ketchup, sweet pickle relish, paprika, and salt until well combined.
  2. Assemble the Sandwiches: Place a slice of Swiss cheese on each piece of rye bread. On half of the slices, spread the creamy coleslaw evenly on top of the cheese. Layer the sliced turkey on the other half of the bread slices. Spoon the Thousand Island dressing over the turkey, dividing it evenly among the slices. Finally, sandwich the slices together, pairing one with turkey and one with coleslaw.
  3. Grill the Sandwiches: Spread butter over the top of each sandwich. Place the sandwich, butter side down, on a preheated pan over medium-low heat. Butter the top side and cover the pan loosely with aluminum foil. Cook until the bottom is golden brown, then flip and cover the pan again. Cook until the second side is golden brown, and the cheese is melted, ensuring the sandwich is heated through.
