For the Stir Fry:

  • 2 packages (6 oz each) ramen noodles, seasoning packets discarded
  • 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 3 green onions, sliced (white and green parts separated)

For the Sauce:

  • ¼ cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • ¼ tsp white pepper

Instructions

  1. Prepare the Sauce: In a small bowl, mix soy sauce, oyster sauce, sesame oil, sugar, and white pepper. Set aside.
  2. Cook the Chicken: Heat 1 tbsp of vegetable oil in a wok over high heat. Stir-fry chicken until golden brown and cooked through, about 5-6 minutes. Remove and set aside.
  3. Stir-Fry Vegetables: In the same wok, add remaining oil. Stir-fry bell pepper, snap peas, and carrot until crisp-tender, about 2-3 minutes.
  4. Add Aromatics: Add garlic, ginger, and white parts of green onions. Stir-fry for 30 seconds until fragrant.
  5. Cook Noodles: Cook ramen noodles in boiling water for 2 minutes. Drain well.
  6. Combine Ingredients: Return chicken to the wok with vegetables. Add noodles and sauce. Stir-fry for 2-3 minutes until heated through.
  7. Garnish and Serve: Garnish with green parts of green onions. Serve hot.

  • You can customize this stir-fry by adding your favorite vegetables like mushrooms, broccoli, or baby corn.
