Main Ingredients:
- 2 eggs, beaten
- 1 tsp salt
- 1 ½ cups milk
- ½ cup vegetable or canola oil
- 1 medium onion, finely grated
- ½ tsp dry mustard
- 1 cup fresh parsley, chopped
- 2 cups cheddar cheese, shredded
- 1 cup dry rice
- ½ tsp salt (for cooking rice)
- 1 tbsp butter (for cooking rice and greasing dish)
- Cook the Rice: In a saucepan, bring 2 cups of water to a boil. Add ½ tsp salt and 1 tbsp butter, then stir in the dry rice. Cover and simmer for 15–20 minutes until the rice is tender and water is absorbed. Remove from heat.
- Prepare the Mixture: While the rice is cooking, beat the eggs lightly with a fork in a large mixing bowl. Grate the onion finely, chop the parsley, and shred the cheddar cheese. Add these to the eggs.
- Combine Ingredients: Add 1 tsp salt, dry mustard, milk, and oil to the bowl with the eggs and vegetables. Mix well.
- Add Rice: When the rice is cooked, add it to the bowl and stir everything together until evenly combined.
- Bake: Preheat the oven to 350°F (175°C). Butter a 9×11-inch baking dish. Pour the rice mixture into the dish and spread evenly. Bake uncovered for 1 hour until the top is golden and the casserole is set.
