  • 4 skinless salmon fillets
  • 1 tsp salt, divided
  • 1 tsp coarsely ground black pepper, divided
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tsp unsalted butter

Lemon Orzo:

  • 1 yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup dry orzo pasta
  • 1 tsp dried thyme
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • juice from ½ lemon
  • ½ cup grated Parmesan
  • freshly ground black pepper, for serving
  • chili flakes, for serving

Instructions

  1. Prepare the Salmon: Season the salmon fillets with garlic powder, sweet paprika, ½ tsp salt, and ½ tsp pepper. Sear in a skillet for 3-4 minutes per side, then set aside.
  2. Cook the Orzo: In the same skillet, sauté garlic and onion. Add thyme, remaining salt and pepper, then toast the orzo. Pour in broth, simmer until nearly cooked, then add spinach, lemon juice, and Parmesan.
  3. Finish the Dish: Return salmon to the skillet, simmer briefly. Serve with black pepper and chili flakes.
