Ground Turkey:
Sweet Potatoes:
- 2 medium sweet potatoes, peeled and diced
Zucchinis:
- 2 medium zucchinis, diced

- Preheat the Oven: Set your oven to 400°F (200°C) and grease a large baking dish with olive oil.
- Sauté the Veggies: In a large skillet over medium heat, heat the olive oil. Add the diced onion and minced garlic, and sauté for about 3-4 minutes, until the onion is translucent.
- Cook the Ground Turkey: Add the ground turkey to the skillet and cook for 5-7 minutes, breaking it apart with a spoon as it cooks. Once browned, drain any excess fat.
- Add the Sweet Potatoes & Zucchini: Stir in the diced sweet potatoes, zucchini, smoked paprika, Italian seasoning, salt, and pepper. Cook for another 5-7 minutes until the veggies begin to soften.
- Transfer to Baking Dish: Once everything is cooked through, transfer the mixture to the prepared baking dish and spread it out evenly.
- Top with Cheese: Sprinkle the shredded cheese over the top of the turkey and veggie mixture.
- Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, until the sweet potatoes are tender and the cheese is melted and bubbly.
- Garnish & Serve: Remove from the oven and let it cool for a few minutes. Before serving, sprinkle with fresh parsley for a burst of color and flavor.
