  • 1 ⅓ cups All purpose flour, sifted
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Spray a 9×5 inch loaf pan with nonstick spray and line the bottom and two sides with parchment paper to prevent sticking and make removal easier.
  2. Mash the bananas and combine sugar: In a large bowl, add the three extra ripe bananas. Use a fork to mash them until they are smooth. Add the sugar to the mashed bananas and mix well until combined thoroughly.
  3. Add wet ingredients: Stir in the eggs, vanilla extract, and canola oil into the banana and sugar mixture until everything is uniformly blended.
  4. Sift and combine dry ingredients: Sift together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the banana mixture, gently stirring just until combined to avoid overmixing.
  5. Bake the banana bread: Pour the batter into the prepared loaf pan. Bake in the preheated oven for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
