These Oatmeal Peanut Butter Energy Bites are a quick, no-bake snack packed with wholesome oats, creamy peanut butter, sweet honey, and chocolate chips. They’re perfect for a nutritious on-the-go energy boost or a tasty treat anytime you need a pick-me-up.

Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups old fashioned oats
  • 1/4 cup mini chocolate chips
  • 1/4 tsp. ground cinnamon

Wet Ingredients

  • 1/2 cup creamy peanut butter, melted
  • 1/4 cup honey, melted
  • 1/4 tsp. vanilla extract

Instructions

  1. Combine Ingredients: In a large mixing bowl, add the oats, mini chocolate chips, ground cinnamon, melted creamy peanut butter, melted honey, and vanilla extract. Stir well until all ingredients are thoroughly combined and the mixture is sticky enough to hold together.
  2. Form Energy Bites: Using a mini ice cream scoop or your hands, portion out the mixture and roll it into approximately 15 bite-sized balls. Ensure they are compact so they hold their shape.
  3. Chill and Store: Place the rolled energy bites in the refrigerator for at least 30 minutes to firm up. Once chilled, store them in an airtight container in the refrigerator to keep fresh until ready to eat.

Notes

  • You can substitute almond butter or sunflower seed butter for peanut butter if you prefer.
  • For a vegan version, replace honey with maple syrup.
  • Add a tablespoon of chia seeds or flaxseeds for extra fiber and omega-3 benefits.
  • These energy bites keep well refrigerated for up to one week or can be frozen for up to three months.
  • If the mixture feels too dry, add a little more honey or peanut butter; if too wet, add extra oats.
