Zucchini:

  • 4 medium zucchini (about 810 inches long)

Filling:

  • 1 cup crumbled feta cheese
  • 1 cup cherry tomatoes, quartered
  • 1/2 cup kalamata olives, pitted and chopped
  • 1 small red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional)
  • Extra virgin olive oil for drizzling

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C).
  2. Prepare Zucchini: Wash and dry the zucchini. Slice each in half lengthwise, scoop out flesh, leaving a border. Place on a baking sheet.
  3. Prepare Filling: Heat olive oil, sauté onion and garlic. Add chopped zucchini flesh, cook, then add tomatoes, olives, herbs, salt, and pepper.
