Ingredients

Scale

Meatloaf

  • 1 ½ lbs lean ground beef or beef/pork blend
  • 1 cup finely chopped onion
  • ¾ cup bread crumbs (panko crumbs, crushed crackers, or tortilla chips can be used)
  • ⅓ cup milk (can substitute beef broth or water)
  • 2 eggs
  • 2 Tbsp tomato paste
  • 1 Tbsp dried minced onion
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley

Gravy

  • 1 package brown gravy mix

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil and lightly spray the foil with nonstick cooking spray to prevent sticking.
  2. Mix Meatloaf Ingredients: In a large bowl, combine the ground beef or beef/pork blend, finely chopped onions, bread crumbs (or alternative), milk (or broth/water), eggs, tomato paste, dried minced onion, garlic powder, onion powder, and dried parsley. Mix thoroughly to evenly distribute all ingredients.
  3. Shape the Meatloaf: Lightly spray a loaf pan with non-stick cooking spray. Pack the meat mixture firmly into the loaf pan. Then carefully flip the loaf pan onto the prepared baking sheet. This technique ensures a perfect meatloaf shape and allows juices to drip onto the baking sheet.
  4. Bake Meatloaf: Place the baking sheet with the meatloaf in the preheated oven. Bake uncovered for 40-50 minutes. This cooks the meatloaf through without gravy on top.
  5. Prepare Gravy: While the meatloaf is baking, prepare the brown gravy mix according to the package instructions, usually by combining with water and heating until thickened.
  6. Check Meatloaf Doneness: Remove the meatloaf from the oven and check its internal temperature with a meat thermometer. It should read 160°F (71°C) to ensure it is fully cooked and safe to eat.
  7. Add Gravy and Rest: Pour the prepared brown gravy over the cooked meatloaf. Let the meatloaf rest for 10 minutes. Resting helps retain juices and makes slicing easier and neater.
  8. Serve: Slice the meatloaf and serve warm with your favorite sides.

Notes

  • Check the internal temperature of the meatloaf with a meat thermometer for food safety.
  • If you prefer a topping on the meatloaf, you can add some of the tomato paste or ketchup on top for the last 10 minutes of baking before adding the gravy.
  • Use lean ground meat to reduce fat content and grease.
  • Resting the meatloaf after baking allows juices to redistribute for moist slices.
  • Feel free to substitute milk with beef broth or water if preferred.
