Salmon:

  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Cream Sauce:

  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon red pepper flakes (optional)
  • 2 tablespoons sun-dried tomatoes, chopped
  • 2 tablespoons fresh basil, chopped
  • Juice of 1 lemon

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C).
  2. Sear Salmon: Heat olive oil in a large oven-safe skillet over medium-high heat. Season salmon fillets with salt and pepper. Sear salmon skin-side up for 3-4 minutes until golden brown, then flip and cook for 2 more minutes. Remove salmon and set aside.
  3. Make Sauce: In the same skillet, reduce heat to medium, add minced garlic, and sauté for 1 minute until fragrant. Pour in chicken broth and heavy cream, stirring gently to combine. Add Parmesan cheese, red pepper flakes (if using), sun-dried tomatoes, and lemon juice. Stir and let the sauce simmer for 3-4 minutes until slightly thickened.
  4. Bake: Return salmon fillets to the skillet, spoon sauce over them, and transfer the skillet to the oven. Bake for 8-10 minutes or until salmon is cooked through and flakes easily with a fork.
  5. Finish and Serve: Remove from oven, sprinkle with fresh basil, and serve immediately.
