Blondies

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter (softened)
  • 1/4 cup sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Apple Filling

  • 2 large apples (chopped finely)
  • 2 Tbsp brown sugar
  • 1 Tbsp butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Maple Glaze

  • 2 Tbsp butter
  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 1/8 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F and line an 11×7 pan with tin foil or cooking spray.
  2. Apple Filling: Cook apple filling mixture on med-low heat for 3-4 minutes, then set aside to cool.
  3. Blondies:
    • Cream butter until light and fluffy, add sugars, and mix well.
    • Beat in eggs one at a time, then add salt and vanilla.
    • In a separate bowl, mix flour, baking powder, and cinnamon; combine with wet ingredients.
    • Spread half of the batter in pan, add apple filling, top with remaining batter, and bake for 25-30 minutes.
  4. Maple Glaze:
    • Melt butter, maple syrup, vanilla, and cinnamon over low heat; remove from heat.
    • Whisk in powdered sugar until smooth. Cool for 8-10 minutes to thicken.
    • Pour glaze over cooled bars and let it set.
  5. Slice into squares and enjoy!
