Ingredients

Scale

Fudge Base

  • 2 bags white chocolate chips (1112 oz each)
  • 1 container vanilla frosting (16 oz)

Mix-Ins & Toppings

  • 2 cups Lucky Charms marshmallows
  • St. Patrick’s Day sprinkles (optional)

Instructions

  1. Prepare Pan: Line an 8×8 or 9×9-inch baking dish with parchment paper or foil, leaving an overhang on the sides for easy removal later. Lightly spray the lined pan with non-stick spray to prevent sticking.
  2. Melt White Chocolate: Place the white chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth without any lumps.
  3. Soften Frosting: Microwave the vanilla frosting for about 30 seconds until it becomes slightly softened and pourable, making it easier to mix.
  4. Combine Chocolate and Frosting: Stir the warmed vanilla frosting into the melted white chocolate thoroughly until the mixture is fully blended and smooth in texture.
  5. Add Marshmallows: Gently fold in 1½ cups of the Lucky Charms marshmallows, working quickly to incorporate them before the fudge mixture begins to set.
  6. Spread in Pan: Evenly spread the fudge mixture into the prepared baking dish. Press the remaining marshmallows and optional St. Patrick’s Day sprinkles gently on top for decoration.
  7. Chill and Set: Refrigerate the fudge for at least 2 hours or until firm. Once set, lift the fudge out of the pan using the parchment overhang and slice into squares for serving.

Notes

  • Use parchment paper with an overhang for easy fudge removal.
  • Do not overheat the white chocolate to prevent scorching; stir frequently.
  • Work quickly when folding marshmallows into the fudge before it hardens.
  • Store fudge in an airtight container in the refrigerator for up to one week.
  • Optional sprinkles add festive color and texture but can be omitted.
