Instructions

  1. Soak the beans: Place dry beans in a large pot, cover with water, and soak for 8 hours or overnight.
  2. Brown the andouille sausages: Cook sausages in olive oil until browned, then set aside.
  3. Sauté the vegetables: Cook onions, celery, and bell peppers with garlic.
  4. Season and add broth: Stir in spices, pour in broth, and scrape up browned bits.
  5. Add beans and sausage: Drain and rinse beans, then add to pot with sausage.
  6. Simmer: Bring to a boil, then cover and simmer for 1 ½ to 2 hours until beans are tender.
  7. Mash the beans: Remove bay leaves, mash some beans, then return to pot.
  8. Adjust: Add water or broth if too thick, adjust seasonings.
  9. Finish and serve: Stir in parsley and green onions, then serve over cooked rice.
