Bacon:
8 slices of bacon, fried crispy
Cauliflower and Broccoli:
1/2 large head cauliflower, cut into florets
1/2 large head broccoli, cut into florets
Sauce:
1/2 cup sour cream
1/2 cup mayonnaise
1 tablespoon heavy cream
¼ teaspoon black pepper
Cheese Mixture:
1 cup shredded colby & monterey jack cheese
1 cup sharp cheddar cheese
6 tablespoons chopped fresh chives, divided
- Preheat oven to 370 degrees: Prepare the oven for baking.
- Fry the bacon: Cook the bacon in a skillet until crispy, crumble, and set aside.
- Steam cauliflower and broccoli: Steam the cauliflower and broccoli until tender, about 15 to 20 minutes.
- Make the sauce: In a large bowl, mix sour cream, mayonnaise, heavy cream, and black pepper. Add the steamed cauliflower, broccoli, 1/2 of the bacon, cheddar cheese, and 3 tablespoons of chives. Mix well.
- Transfer to baking dish: Place the mixture in a baking dish and top with Colby, Monterey jack cheese, and the remaining bacon.
- Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes until cheese is bubbly and starting to brown.
- Garnish and serve: Garnish with the remaining chives and serve hot.
