  • 2 whole heads of garlic, peeled
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 tablespoons butter
  • 6 cups chicken or vegetable broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper, to taste

For Serving:

  • 4 egg yolks
  • 1/2 cup grated Parmesan cheese
  • Crusty bread
  • Fresh parsley (optional for garnish)

Instructions

  1. Sauté Aromatics: Heat olive oil and butter in a large pot. Add onion and sauté until softened.
  2. Cook Garlic: Add peeled garlic cloves and cook for a few minutes.
  3. Add Broth: Pour in broth, thyme, and bay leaves. Simmer for 30 minutes.
  4. Prepare Egg Mixture: Whisk egg yolks and Parmesan cheese in a bowl.
