1 cup wild rice
Mixed Mushrooms
2 cups mixed mushrooms (cremini and shiitake), sliced
Onion and Garlic
1 medium onion, chopped
3 cloves garlic, minced
Veggie Broth and Cream
4 cups low-sodium vegetable broth
1 cup heavy cream
Seasonings
2 tsp fresh thyme leaves (or 1 tsp dried thyme)
2 tbsp olive oil
Salt and pepper to taste
Instructions
Sauté Aromatics: Heat olive oil in a large pot over medium heat. Sauté onions and garlic until translucent (about 5 minutes).
Cook Mushrooms: Add sliced mushrooms and cook until tender and golden brown (around 8 minutes).
Add Rice and Broth: Stir in wild rice and vegetable broth. Bring to a boil, then cover and simmer for 45 minutes until rice is tender.
Finish with Cream: Pour in heavy cream, stir, and simmer for an additional 10 minutes.
Season and Serve: Season with thyme, salt, and pepper. Serve hot, garnished with extra thyme if desired.
