Onion and Garlic

  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Veggie Broth and Cream

  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream

Seasonings

  • 2 tsp fresh thyme leaves (or 1 tsp dried thyme)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Sauté onions and garlic until translucent (about 5 minutes).
  2. Cook Mushrooms: Add sliced mushrooms and cook until tender and golden brown (around 8 minutes).
  3. Add Rice and Broth: Stir in wild rice and vegetable broth. Bring to a boil, then cover and simmer for 45 minutes until rice is tender.
  4. Finish with Cream: Pour in heavy cream, stir, and simmer for an additional 10 minutes.
  5. Season and Serve: Season with thyme, salt, and pepper. Serve hot, garnished with extra thyme if desired.
