Instructions

  1. Season Chicken: In a small bowl, combine garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture evenly over the chicken thighs to prepare for cooking.
  2. Sear Chicken: Heat a skillet over medium heat. Add the chicken thighs and cook for 3 to 4 minutes on each side, until golden brown. Remove the chicken from the skillet and set aside.
  3. Prepare Sauce: In a bowl, whisk together BBQ sauce, honey, soy sauce, and minced garlic until smooth and well combined.
  4. Toast Rice: Using the same skillet, add the uncooked rice and toast for 1 to 2 minutes, stirring frequently to prevent burning and to enhance the flavor.
  5. Add Broth and Sauce: Pour in the chicken broth and half of the prepared sauce into the skillet with the toasted rice. Stir well to combine all ingredients evenly.
  6. Simmer Chicken and Rice: Return the seared chicken thighs to the skillet, placing them on top of the rice mixture. Pour the remaining sauce evenly over the chicken. Cover the skillet with a lid and reduce the heat to low. Let it simmer for 15 minutes.
  7. Add Vegetables: Sprinkle the mixed vegetables over the rice and chicken, then cover the skillet again. Continue cooking for another 5 minutes, or until the rice is tender and the chicken is fully cooked through.
  8. Rest and Garnish: Remove the skillet from heat and let it sit covered for 5 minutes to allow flavors to meld. Garnish with chopped green onions before serving hot.
