Vegetables

  • 2 large potatoes, diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup green beans, trimmed and cut into pieces
  • 1 cup corn kernels (fresh or frozen)

Liquids & Canned Goods

  • 4 cups vegetable broth
  • 1 can diced tomatoes (14.5 oz)

Herbs & Spices

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Prepare Ingredients: Dice the potatoes, slice the carrots, chop the celery, dice the onion, mince the garlic, trim and cut green beans, and measure out corn kernels.
  2. Add to Crockpot: Place all the prepared vegetables along with the vegetable broth, diced tomatoes, dried thyme, and rosemary into the crockpot.
  3. Mix Well: Stir all the ingredients together to evenly distribute the herbs and vegetables.
  4. Cook: Cover the crockpot with its lid and cook on low for 6-8 hours or on high for 3-4 hours until vegetables are tender and flavors are well combined.
  5. Season and Serve: Taste the stew and adjust seasoning by adding salt and pepper as needed before serving warm.

  • You can add other vegetables like peas or mushrooms based on preference.
