Vegetables
- 1 onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup diced potatoes
Legumes & Broth
- 1 cup cooked lentils
- 4 cups vegetable broth
Seasonings & Oils
- 1 tbsp olive oil
- 2 tbsp tomato paste
- 1 tsp thyme
- Salt and pepper, to taste
- Heat the oil: In a large pot, warm 1 tablespoon of olive oil over medium heat until shimmering, preparing it for sautéing the vegetables.
- Sauté the aromatics and veggies: Add the diced onion, minced garlic, diced carrots, and diced celery to the pot. Cook them gently for about 5-7 minutes, stirring occasionally, until they are softened and fragrant but not browned.
- Add remaining ingredients: Stir in the diced potatoes, cooked lentils, vegetable broth, tomato paste, and thyme. Mix thoroughly to combine the tomato paste evenly and distribute the herbs.
- Simmer the stew: Bring the mixture to a boil, then lower the heat to maintain a gentle simmer. Cover the pot and cook for 20 to 25 minutes until the potatoes are tender and the flavors meld together.
- Season and serve: Taste the stew and season with salt and freshly ground black pepper according to your preference. Serve hot, ideally with crusty bread on the side to soak up the delicious broth.
Notes
- For added depth, include a bay leaf during simmering and remove before serving.
- You can use canned lentils if you prefer; just be sure to drain and rinse them well.
- To make the stew thicker, mash a few potato chunks against the side of the pot and stir.
- This stew freezes well; store in airtight containers for up to 3 months.
- Adjust the consistency by adding more vegetable broth if the stew becomes too thick upon storing.
