Instructions

  1. Prepare Chicken and Vegetables: Start by cutting the boneless, skinless chicken breasts into 1-inch cubes. Cook the white rice and green beans according to package directions so they’re ready when the chicken is done.
  2. Cook Chicken: Heat 1/2 tablespoon of avocado oil in a pan over medium-high heat for about 1 minute. Add the chicken cubes and sauté, turning frequently, until they are browned on all sides and fully cooked through, about 10-12 minutes.
  3. Make the Sauce: While the chicken cooks, whisk together the coconut aminos, honey, toasted sesame oil, ground ginger, minced garlic, rice vinegar, black pepper, lime zest, and lime juice in a bowl until well combined.
  4. Cook the Sauce: Once the chicken is done, remove it from the pan and set it aside. Pour the prepared sauce into the still hot pan (do not clean the pan), and cook it over medium-high heat for 3-5 minutes. Stir constantly as the sauce thickens and starts to bubble, being careful not to let it burn.
  5. Combine Chicken and Sauce: Return the cooked chicken to the pan and toss well to coat all pieces evenly with the thickened sesame sauce.
