A healthier twist on a classic Italian favorite, this Healthy Baked Chicken Parmesan recipe results in tender chicken cutlets coated in a crispy whole wheat breadcrumb mixture, topped with marinara sauce and melted mozzarella cheese.

Chicken:

  • 1.5 lbs boneless, skinless chicken breasts (about 3 large chicken breasts or 1.5 lbs chicken cutlets)

Breading Mixture:

  • 1 cup whole wheat flour
  • 3 large eggs
  • 1.5 cups shredded mozzarella
  • 1.5 cups marinara sauce

Breading Mixture:

  • 1 cup whole wheat bread crumbs (unseasoned)
  • ½ cup parmesan cheese
  • ¼ teaspoon pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

Instructions

  1. Butterfly and pound chicken breasts: Slice the chicken breasts in half lengthwise and pound between plastic wrap until ¼ inch thick.
  2. Preheat oven and prepare baking sheet: Preheat to 425°F and line a baking sheet with parchment paper.
  3. Set up breading station: In 3 bowls, place flour in the first, whisked eggs in the second, and bread crumb mixture in the third.
  4. Bread the chicken: Coat each cutlet in flour, then egg, then bread crumb mixture. Press gently to coat.
  5. Bake: Place breaded cutlets on the baking sheet. Bake at 425°F for 15 minutes, flip, then bake for another 15 minutes.
