Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil to prevent sticking.
  2. Sauté Aromatics: In a large skillet over medium heat, add olive oil and sauté the chopped onion and minced garlic until fragrant, about 2 minutes, to release their flavors.
  3. Cook Turkey: Add the ground turkey to the skillet and cook until browned and no longer pink, breaking it up with a spoon, about 5-6 minutes.
  4. Add Tomatoes and Seasoning: Stir in the drained diced tomatoes, dried Italian herbs, salt, and black pepper. Allow the mixture to simmer gently for 3-4 minutes to meld the flavors.
  5. Layer Casserole: In the prepared baking dish, layer half of the sliced zucchini evenly. Top with half of the turkey mixture, then sprinkle with half of the shredded mozzarella. Repeat the layers to use all ingredients.
  6. Bake: Bake uncovered for 30-35 minutes until the casserole is bubbly and the cheese is melted and golden brown on top.
