  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 2 medium zucchinis
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Pinch of crushed red pepper flakes
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Peel and finely chop the onion. Add the chopped onion to the skillet and sauté until soft and translucent, about 3-4 minutes.
  3. Peel and mince the garlic cloves. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
  4. Crumble the ground turkey into the skillet and cook for 6-8 minutes until browned.
  5. Prepare the zucchinis. Slice them into half-moon shapes.
  6. Add the zucchini to the skillet with the ground turkey and cook for 4-5 minutes.
  7. Season the mixture with oregano, salt, pepper, and red pepper flakes.
  8. Pour in the chicken broth and simmer for 3-4 minutes.
  9. Sprinkle Parmesan cheese over the skillet and stir until melted.
  10. Adjust seasoning and serve hot, garnished with extra Parmesan.
