  • ¾ cup large diced sweet yellow onion (Vidalia onion)
  • ¾ cup large diced red bell pepper (seeds removed)
  • ½ cup sugar snap peas, cut in half on a diagonal
  • ½ cup carrots, peeled and cut into ¼ inch rounds
  • ½ cup sliced button mushrooms

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together the low-sodium soy sauce, water, Mirin, honey, cornstarch, freshly grated garlic, freshly grated ginger, sesame oil, and crushed red pepper flakes until smooth and well combined. Set aside to use later for coating the stir fry.
  2. Cook the Ground Beef: Heat a large 12-inch skillet over medium-high heat. Add the lean ground beef along with salt and black pepper. Cook the beef for 7 to 8 minutes, stirring occasionally, until fully browned with no pink remaining. Be careful to keep some chunkiness to the meat rather than breaking it into very small pieces for texture.
  3. Drain Excess Fat: Using a large slotted spoon, transfer the cooked beef to a paper towel-lined plate to drain excess fat. Remove any remaining liquid fat from the skillet but do not wash the skillet. This will prepare the pan for cooking the vegetables.
  4. Sauté the Vegetables: Return the skillet to medium-high heat and add the peanut oil. Add the broccoli florets, diced sweet yellow onion, diced red bell pepper, sugar snap peas, sliced carrots, and button mushrooms. Cook the vegetables, stirring occasionally, for 8 to 10 minutes until they are tender but still retain a slight crispness.
  5. Combine and Thicken Sauce: Add the drained ground beef back to the skillet with the vegetables. Pour the prepared sauce over the mixture and stir thoroughly to coat all ingredients evenly. Allow the sauce to cook and thicken for 45 seconds to 1 minute. Remove from heat—the sauce will continue to thicken as it cools. Serve warm.
