Ingredients

Scale

Meat and Seasoning

  • 1 lb ground beef (preferably 90% lean for a healthier option)
  • 2 tsp taco seasoning (store-bought or homemade mix of chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper)

Base

  • 2 cups cooked rice (white, brown, jasmine, basmati, or cauliflower rice)

Beans and Vegetables

  • 1 cup black beans (drained and rinsed if canned)
  • 1 cup corn kernels (fresh, canned, or frozen)

Toppings

  • Salsa (to taste)
  • Guacamole (to taste)
  • Shredded cheese (to taste)
  • Fresh cilantro (for garnish)

Instructions

  1. Cook the Ground Beef: Warm a large skillet over medium-high heat. Add a teaspoon of oil if using lean beef to prevent sticking. Add 1 lb of ground beef and use a spatula to crumble it. Sprinkle 2 tsp taco seasoning as the beef starts to brown. Cook, stirring frequently, until no pink remains, about 7–10 minutes. Drain excess fat if necessary.
  2. Prepare the Rice: Choose your rice variety and cook according to package instructions, typically by boiling and simmering until water is absorbed. Fluff cooked rice with a fork and keep warm.
  3. Get the Beans and Corn Ready: Rinse and drain canned black beans and corn to remove excess sodium. Optionally, heat them in a saucepan or microwave if warm toppings are preferred.
  4. Assemble the Bowls: Spoon 2 cups of cooked rice into each serving bowl. Top with an equal portion of seasoned ground beef, then scatter 1 cup each of black beans and corn over the top. Garnish with salsa, guacamole, shredded cheese, and fresh cilantro. Serve immediately for best flavor, letting the warmth slightly melt the cheese.

Notes

  • For a leaner dish, choose ground beef with at least 90% lean or substitute with ground turkey or chicken.
  • Make your own taco seasoning to control sodium and spice levels.
  • Rinse canned beans and corn thoroughly to reduce sodium content.
  • Feel free to add additional garnishes like diced tomatoes, jalapeños, or shredded lettuce for extra flavor and texture.
