Grilled Chicken Caprese is a delicious and flavorful dish that combines tender grilled chicken with the classic Caprese salad ingredients of fresh mozzarella, ripe tomatoes, and fragrant basil, all finished with a sweet and tangy balsamic reduction.

For the Grilled Chicken:

  • 4 chicken breasts
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste

For the Caprese Topping:

  • 4 slices mozzarella
  • 4 slices tomato
  • 2 tablespoons fresh basil, sliced

For the Balsamic Reduction:

  • ½ cup balsamic vinegar
  • 2 tablespoons light brown sugar

Instructions

  1. Prepare the Balsamic Reduction: In a small saucepan, combine the balsamic vinegar and brown sugar. Bring to a simmer over medium heat, stirring occasionally. Let the mixture simmer for 8-10 minutes, or until it has thickened to a syrupy consistency. Set aside to cool.
  2. Prepare the Chicken: Preheat your grill or grill pan to medium-high heat. Season the chicken breasts on both sides with Italian seasoning, garlic powder, onion powder, salt, and pepper. Grill the chicken for 6–7 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
  3. Assemble the Caprese Chicken: When the chicken is cooked, top each breast with a slice of mozzarella and a slice of tomato. Close the grill lid and allow the cheese to melt for 2-3 minutes. Remove the chicken from the grill.
  4. Serve: Arrange the grilled chicken breasts on a serving platter.
