For the Meatloaf:

  • 1 lb ground beef (80% lean)
  • 1/2 lb ground pork
  • 1 small onion, finely chopped
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 packet French onion soup mix
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste

For the Glaze:

  • 1/4 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Prepare the Onion Mixture: Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until caramelized. Add garlic, cook until fragrant, then set aside to cool.
  2. Make the Meatloaf: Mix beef, pork, breadcrumbs, milk, egg, soup mix, Worcestershire sauce, salt, pepper, and cooled onions. Combine well.
  3. Shape and Bake: Transfer mixture to a loaf pan, shape, and bake at 350°F for 50-60 minutes.
  4. Prepare the Glaze: Mix ketchup, mustard, sugar, soy sauce, and Worcestershire. Glaze meatloaf after 40 minutes of baking and bake an additional 10-15 minutes.
