Delicious and convenient Freezer Breakfast Sandwiches made with fluffy baked eggs, savory bacon or sausage, melted cheddar cheese, and toasted English muffins. Perfect for busy mornings, these sandwiches can be assembled ahead, frozen for up to one month, and quickly reheated for a hearty breakfast on the go.

Ingredients

Scale

Egg Mixture

  • 12 eggs
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Meat Options

  • 12 slices cooked bacon, sausage patties, ham, or Canadian bacon

Sandwich Components

  • 12 English muffins, split
  • 12 slices cheddar cheese or your favorite cheese

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 325°F (163°C). Generously grease a 9×13 inch baking pan to prevent sticking.
  2. Mix Egg Mixture: In a bowl, whisk together the eggs, milk, salt, and freshly ground black pepper until well combined. Using an electric mixer can make this easier and fluffier.
  3. Bake Eggs: Pour the egg mixture evenly into the greased pan. Bake in the preheated oven for 18-22 minutes, or until the center is just set and firm. Avoid overcooking to maintain fluffy texture.
  4. Cool and Cut Eggs: Remove the baked eggs from the oven and allow to cool completely. Once cooled, cut the baked egg sheet into 12 equal squares to fit the English muffins.
  5. Assemble Sandwiches: Top the bottom half of each English muffin with a square of baked egg, a slice of cheddar cheese, and a slice of your cooked meat choice. Cover with the top half of the muffin.
  6. Serve or Freeze: If eating immediately, heat sandwiches in a 350°F oven for about 5 minutes or until cheese has melted. To freeze, wrap each sandwich individually in tinfoil, wax paper, or parchment paper and place in a resealable freezer-safe bag. Freeze up to 1 month.
  7. Reheat Frozen Sandwiches: For best results, thaw sandwiches overnight in the refrigerator. Remove wrapping and rewrap in a paper towel. Microwave on 50% power (defrost) for 40 seconds to 1 minute, flip, then microwave on high for another 10-30 seconds until warmed through. Alternatively, reheat in a 350°F oven for 10-15 minutes or use a toaster oven until hot.

Notes

  • You can customize the sandwiches with your favorite breakfast meats or cheeses.
  • Make sure the baked egg is cooled completely before assembling to prevent sogginess.
  • Use fresh English muffins and toast lightly if desired before assembly for extra texture.
  • These sandwiches can be frozen for up to 1 month for easy grab-and-go breakfasts.
  • Reheat thoroughly to ensure food safety and best flavor.
