Ingredients

Scale

Shortcake

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2/3 cup whole milk
  • 1 teaspoon vanilla extract

Strawberries

  • 1 pound fresh strawberries, sliced
  • 1/4 cup granulated sugar (for strawberries)

Whipped Cream

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Prepare the Strawberries: In a bowl, combine the sliced fresh strawberries with 1/4 cup of granulated sugar. Stir well to coat and let sit for at least 15 minutes to allow the strawberries to release their natural juices, creating a sweet syrup.
  2. Make the Shortcakes: Preheat your oven to 400°F (200°C). In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Cut in the cold, cubed unsalted butter using a pastry cutter or two knives until the mixture resembles coarse crumbs. Stir in the whole milk and 1 teaspoon of vanilla extract just until combined to form the dough.
  3. Bake the Shortcakes: Lightly flour a surface and turn out the dough onto it. Pat the dough into a round about 1 inch thick. Using a biscuit cutter or knife, cut the dough into circles or squares based on your preference. Arrange them on a baking sheet and bake in the preheated oven for 12-15 minutes or until the shortcakes are golden brown and cooked through. Remove from oven and let them cool slightly.
  4. Prepare Whipped Cream: In a chilled mixing bowl, beat the heavy whipping cream with powdered sugar and 1/2 teaspoon vanilla extract using an electric mixer. Whip until soft peaks form, ensuring the whipped cream is light and fluffy.
  5. Assemble the Shortcakes: Carefully slice each shortcake in half horizontally. Spoon a generous amount of the macerated strawberries with their juices over the bottom half of each shortcake. Add a dollop of the homemade whipped cream on top of the strawberries, then place the top half of the shortcake over the cream to complete the assembly.
  6. Serve & Enjoy: Garnish with additional fresh strawberries and a dusting of powdered sugar if desired. Serve immediately for best taste and texture.

Notes

  • For best results, use fresh, ripe strawberries to enhance flavor.
  • Ensure the butter is very cold before cutting it into the dry ingredients for flaky shortcakes.
  • Do not overmix the dough to keep the shortcakes tender and fluffy.
  • Whip the cream just until soft peaks form to avoid overwhipping.
  • Shortcakes are best enjoyed the same day they are made.
