  • 1 bag (227 g) shredded Mexican cheese blend
  • 4 cups (about 600 g) cooked chicken breast, shredded
  • 2 cups (370 g) dry instant rice
  • 1 can (298 g) condensed cream of chicken soup
  • 1 cup (240 g) sour cream
  • 1 cup (140 g) frozen mixed diced onions and bell peppers
  • 1 can (284 g) diced tomatoes with green chilies, including juices
  • 360 ml chicken stock
  • 1 packet (32 g) fajita spice mix

Instructions

  1. Coat the Oven Dish: Lightly coat a 23×33 cm (9×13-inch) oven dish with nonstick cooking spray.
  2. Mix Ingredients: In a large bowl, combine shredded chicken, dry rice, cream of chicken soup, sour cream, diced onion and bell pepper mix, tomatoes with chilies, chicken stock, fajita seasoning, and half the Mexican cheese. Mix until well blended.
  3. Transfer to Pan: Spread the mixture evenly in the greased pan using a spatula.
  4. Bake Covered: Cover with foil and bake at 175°C for 35 minutes.
  5. Add Cheese: Remove foil, sprinkle remaining cheese on top, and bake uncovered for another 10 minutes, until cheese is melted and bubbly.
