Ingredients

Scale

Main Ingredients

  • pounds ground beef
  • 1 large onion, diced finely
  • 1 tablespoon garlic, minced
  • 2 tablespoons sesame oil
  • ½ cup carrots, peeled and finely shredded
  • 16 ounces coleslaw mix
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon red pepper flakes
  • 1½ teaspoons ground ginger
  • ½ to ¾ cup low-sodium soy sauce
  • 2 tablespoons vegetable oil
  • Green onions, optional garnish

Instructions

  1. Cook Ground Beef: In a large deep-sided skillet over medium heat, cook the ground beef until it is no longer pink. Avoid breaking the meat into very small pieces; keep the chunks larger for texture.
  2. Drain and Sauté Onions & Garlic: Drain the grease from the skillet, then return it to the stovetop. Add diced onions and minced garlic to the beef and cook until the onions turn soft and translucent, keeping the beef pieces intact.
  3. Add Sesame Oil, Carrots, and Coleslaw Mix: Stir in 2 tablespoons of sesame oil, shredded carrots, and coleslaw mix using tongs. Let the mixture cook for about 5 minutes to soften the vegetables slightly.
  4. Prepare Seasoning Sauce: In a small bowl, mix together onion powder, garlic powder, red pepper flakes, ground ginger, low-sodium soy sauce, and vegetable oil. Pour this seasoning blend over the beef and vegetable mixture in the skillet.
  5. Simmer and Combine Flavors: Reduce the heat to low and continue cooking for another 5 minutes, allowing the flavors to meld together and the vegetables to finish cooking.
  6. Garnish and Serve: Optionally, garnish with sliced green onions before serving for added freshness and color.

Notes

  • For a low-carb or keto option, use ground pork or turkey instead of beef if preferred.
  • Adjust soy sauce quantity based on your salt preference or dietary restrictions.
  • Vegetable oil can be substituted with any neutral oil such as avocado or canola oil.
  • For extra heat, increase red pepper flakes or add chili sauce.
  • Use a well-ventilated kitchen as cooking beef and vegetables together may produce strong aromas.
