  • 2 cups cooked jasmine rice, cold & day-old (or substitute with any white long grain rice)

Additional Ingredients:

  • 1 green onion, finely chopped
  • 2.5 tablespoons regular soy sauce or light soy sauce (avoid dark soy sauce)
  • ½ tablespoon sesame oil
  • 4 large eggs, beaten
  • 2 tablespoons vegetable oil or any neutral oil

Instructions

  1. Heat vegetable oil: Heat vegetable oil in a large pan or wok. If using a wok, allow the oil to smoke. If using a regular pan, skip smoking the oil.
  2. Cook eggs: Pour in beaten eggs and quickly stir-fry until they take shape but are still moist.
  3. Add rice: Quickly toss in the rice, breaking apart any clumps in the pan.
  4. Combine ingredients: Move everything to one side of the pan. Add remaining oil and green onions to the empty space. Mix green onions into the rice and eggs.
  5. Season and finish: Add soy sauce and sesame oil along the edges of the pan. Toss until grains are browned. Remove from heat and serve hot.

  • You can add additional vegetables or proteins like peas, carrots, or cooked chicken to customize this dish.
