Salad Ingredients

  • 2 cups shelled edamame
  • 2 cups frozen organic corn

Cilantro Lime Dressing

  • Juice of 2 limes (about 23 tablespoons)
  • 3 tablespoons avocado oil
  • 1 tablespoon red apple vinegar
  • 1 tablespoon honey or agave syrup
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin
  • 2 tablespoons chopped fresh cilantro leaves

Instructions

  1. Cook Edamame: Cook the shelled edamame according to package instructions. If using edamame pods, boil the pods in water until tender, then pop the soybeans out into a bowl.
  2. Heat Corn: While the edamame cooks, steam or sauté the frozen corn until it is heated through and slightly tender, about 5 minutes.
  3. Prepare Vegetables: Chop the red bell pepper, finely chop the red onion, and chop the green onion. Combine all these vegetables with the cooked edamame and corn in a large mixing bowl.
  4. Make Dressing: In a mason jar or small bowl, combine lime juice, avocado oil, red apple vinegar, chopped cilantro leaves, honey or agave, sea salt, black pepper, and ground cumin. Shake or whisk well until the dressing is emulsified and smooth.
  5. Toss Salad: Pour the cilantro lime dressing over the salad mixture. Toss everything together gently but thoroughly to coat all the ingredients evenly.
  6. Garnish and Serve: Garnish the salad with extra fresh cilantro leaves if desired. Serve immediately or chill in the refrigerator for 30 minutes for flavors to meld.
