Instructions

  1. Combine Ingredients: In a small pot, whisk together the egg yolks, whole egg, and granulated sugar until the mixture is smooth and well combined. Add the Concord grape juice and citric acid, whisking thoroughly to integrate all ingredients evenly.
  2. Cook the Mixture: Place the pot over medium heat and cook the mixture, whisking constantly to prevent curdling or sticking. Continue until the mixture thickens enough to coat the back of a spoon and a clear trail remains when you run your finger across it. Use an infrared surface thermometer to ensure the mixture reaches approximately 165°F (74°C), which is the safe temperature to cook the eggs thoroughly.
  3. Add Butter: Remove the pot from heat and transfer the hot curd to a bowl. Gradually add the chilled butter pieces, whisking continuously until all butter is fully melted and emulsified into the curd, creating a silky, smooth texture.
  4. Chill: Pour the finished grape curd into a storage container. Cover and chill in the refrigerator for at least 1 hour to let the curd set and develop its flavors before serving.
