Ingredients

Scale

Dough:

  • 2 1/4 teaspoons instant yeast (or active dry yeast)
  • 1 cup warm water (110°F/43°C)
  • 1 tablespoon honey (or sugar)
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup olive oil (extra virgin), plus more for drizzling

Toppings:

  • 2 tablespoons fresh rosemary (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon sea salt (flaky or coarse)

Instructions

  1. Dissolve Yeast: In a large mixing bowl, dissolve the yeast and honey in warm water. Let the mixture sit for 5 minutes, or until it becomes foamy.
  2. Mix Dough: Add the flour, salt, and olive oil to the yeast mixture. Stir until a sticky dough forms. Cover the bowl and let the dough rise for 45–60 minutes.
  3. Preheat Oven: Preheat the oven to 375°F (190°C) and grease a 12-cup muffin tin with olive oil.
  4. Fill Muffin Cups: Spoon the risen dough into the greased muffin cups, filling each about ¾ full.
  5. Add Toppings: Drizzle olive oil over the muffins. Sprinkle with rosemary, garlic, and sea salt.
  6. Bake: Bake for 18–20 minutes until golden brown and crisp. Rotate the pan halfway through baking.
  7. Cool and Serve: Cool the muffins slightly in the tin before transferring to a wire rack. Serve warm or at room temperature.
  8. Storage: Enjoy plain or with dips. Store leftovers in an airtight container or freeze for longer storage.
